Much would depend on year.
In the early days where the WYNs had more time and money than stuff to spend it on, no hull would be "not worth the effort" for the WYNs. Look at the sort of mods they put their cluster-defense hulls through. They're ripping them up and putting them back together wholesale. Toss them a mostly destroyed klingon aft hull and they'd be ecstatic.
Once they have the infrastructure for the War of Return in place, they might leave a cruiser carcass be or finish its destruction to keep it out of other people's hands.

'Intact enough' is minimal shields, and one control box + one propulsion box. Everything else is gravy, just that much less that the WYN need rebuild/reinstall. John is following my intent- early on, NOTHING is beyond the effort and the WYN would welcome the addition of a rear hull conversion. A D6 rear hull with a modified freighter control module attached would be a miracle sip to the WYN.

The most likely scenario I can see with this happening inside the Cluster would be for the Klingon ship to be taken in a boarding action, and the boom systems too damaged to be repairable. The boom would thus be detached (if not done already by the Klingon crew) and scrapped for parts and materials.
Their Orion contacts would probably be able to get them details of how the OK6 conversion was done and they could then mimic that, resulting in an effectively identical ship.
I do not see the Klingons allowing this to happen with anything larger than an F5; they would probably set the self-destruct on the rear hull to prevent exactly this.

Instead of replacing the boom, could it be easier to just hang an entire AuxC frame underneath? Most everything smaller than the D6 has a priority tug version with a pod under the rear hull. (Maybe sans warp engines if the the warp bubble can't be stabilized.)

The minimalist option would be to use a skid to cover the boom stud and replace the bridge, tractor beams, and a couple of labs. Think of a half moon where the boom was ala B5.

Would a self defense skid (there are several different ones to choose from,) and a small freighter control module work?
It would replace much of what was lost with the D6 boom.
