Save the *.gbx file you want (most recent turn) someplace you can browse for it.
In your Cyberboard directory, open an instance of CBPlay.exe. In the menus at the top open File...New...Scenario. Now, in the popup box browse for your CB map file.
A window will pop up and you will have three choices: Game Scenario, Playing Boards, and Playing Piece Trays. Choose Playing Boards. In the next popup screen choose Player Map. This will move you back to the previous popup and you should see "Player Map" under the Playing Boards heading. Click on "Player Map". You should now see your map.
There will be a series of menu headings near the top of the window. click on Edit.
In the dropdown for this menu heading click on "Save Board Image in File". This will open a popup browser window which will allow you to choose a location for your new image file.
The image will be bitmap so you will need to convert it something a bit more useful later.

Kurt is correct in his answer. The one caveat I'll add is that the downloads from the BBS end up with .unk instead of .gbx. You'd need to rename them to get things to work correctly. This isn't relevant to U6, but I'm mentioning it for completeness.

As to what I do- I take screen captures (specifically a region grab instead of a window grab) of the four corners and then stick them together. The map is 2600x1600 pixels wide. Once you add in window borders and the like it is closer to 2700x1650. My monitor only goes to 1920x1200 or so. This means I can see about 2/3rds of the map in Cyberboard. If you look closely you can often see where the join was done - either because I was off by a few pixels at the edge (look at the 157.2 map near the '29' below Tholian space) or because I couldn't get things to line up (you'll see a jagged edge on a planet, border, or text).
I use the autocrop feature to chop the majority of the border problems off (this is why the images end up being 2591-2595 pixels wide). Since this isn't professional grade stuff I don't spend the time to crop out the 1-2 pixels off the borders that would fix the majority of the visual glitches. At least I assume folks don't care about the whitespace off the map edges...
I use GIMP to do this since it is a standard tool on Linux, but there are alternatives ($$$ and/or adware in many cases) which would do the job.

For some reason I don't have a 'Save Board Image in File' choice on my edit menu. Odd. I've got 3.10 which is the newest version.

The 'Save Board Image in File" is part of CBPlay not CBDesign.
Now that I know how to do it I'm good. I then convert the image to a pdf and I can zoom in and out on it. Final map size is 36in x 22in.
Now if I only had my own plotter...

I have access to a plotter....never thought of actually plotting it though. I just cut out the piece of the map I need and print on 8.5x11. I blow it up so I can see it.
It's pretty easy to track ship movements on the map too, if you make custom numbered squad tiles for CB too.

I've printed the maps on a plotter and also 11x17 paper. I generally found the 11x17 to be more user friendly. the plotter sized map was just too cumbersome to do anything with. My 2cents..

If you haven't done it yet, put all of the *gif files into one folder. Then, open the first one in a viewer and scroll through them. The "animation" of the survey of the galaxy is really cool.

That way it'll be easier to find in the future.
This process is a lot less painful than the one I was using too- while I still need to do .bmp -> .gif conversion, I have tools to do that. If I get determined I'll find one that is CLI instead of GUI based. That will really cut down on the drag and drool part.
