If I may be so bold, rather than suggesting over a half-dozen ships, pick the one or two that most interest you.
Also, keep in mind what will make an interesting article. Are you just worried about when the base and subsequent variants are made? Do you want more explanation of why design choices and variants were made? Do you want details on how the class was intended to be used, and how it was actually used (if different)? Be sure to make that clear in the request, too.
In addition, what is possible depends on which ship class is chosen. So, for example, the Orion CA was a rare enough ship that you can talk about most of them specifically. On the other hand, there were so make Orion LRs that only a very few exceptional examples can be described.
Finally, keep in mind how interesting the suggestion likely to be. The Orion CA is going to be viewed as interesting because people like pirates and bigger ships. It is a powerful ship designed to fight other Orions as much as foreign powers. This means that they are going to be involved in a lot of very interesting battles. On the other hand, the Orion LR will have had some interesting battles on their own, but those will mostly be much smaller in scope and much less frequent. (The Orion CA is designed and intended to have interesting battles. The Orion LR is designed and intended to have distinctly uninteresting battles.) And ships that are simply targets probably aren't going to be as interesting to most people.
Again, just some thoughts on things to consider when making suggestions so that they can be more likely to be considered and used.

HOWEVER, I have long seen another character in the 007 franchise having a ship named after him; a Federation Q-ship named the Major Boothroyd.

Hey, Jay, something I've done (on occasion) has been to have an "Observer" character* whose name is a play on my own.
(* I don't know what the proper term is, but to me, an "Observer Character" is one who bears witness to the events transpiring in the story, but who does NOT take an active role in the progress of the story.)
If not using Deth O'Kay, what about using a character with some take on your OWN name in his place?
(Two favorites of mine are the characters of Jeffrey Michael Sinclair and John Montgomery Sheridan from "Babylon 5," created and written by Joseph Michael Stracynzki...)
